Rainbow Milo Cake

I’ve no idea how she does it, but somehow every year I find myself baking a cake for my co-worker Viv for her birthday. Even though we spend most of our days fighting with one another, somehow we’ve formed a relationship around our mutual laziness and love of food. That said, when she requested a Rainbow cake for this year’s birthday I really just wanted to push her over.

Baking and I do not go together, and there may have been more than a little swearing when I started decorating the cake. Luckily a copious amount of M&Ms are a great way to transform a cake from ugly to awesome!

Did I mention the part where Viv and I were friends because we’re both lazy? Almost immediately I discarded her request and must have gone through at least a dozen websites looking for an alternate cake recipe before suddenly remembering an absolutely brilliant cake Steph created a little back. It was sneaky enough to just about satisfy the birthday girl’s request while at the same time simple enough for this part-time baker to tackle.

While I love the theory of baking, it’s something I do rarely and whenever I find myself baking, it suddenly becomes a mission of life or death as I fold in various ingredients. I still managed to mess up the ingredients by adding in a tablespoon of baking soda rather than a teaspoon and watched with dismay when the middle of my cake sank like a rock after being taken out of the oven…

Luckily for me the middle of the cake isn’t needed for the rainbow so I just scooped out the sinkage and snacked while putting together the ganache, which drove me crazy as I managed to split the mixture 3 times before getting it thick enough to slather on the cake. Don’t even get me started about the damn M&M’s not sticking to the cake! I also changed the recipe a little by switching Ovaltine for half a tin of Milo and the resulting cake was a lovely chocolatey sponge with just a hint of milo at the end.

And the verdict from the birthday girl? She loved it, ugly decorations and all. We then had an impromptu photo shoot in the office as soon as we got in much to the curiosity of our other coworkers (lol).

The cake recipe is up at Raspberri Cupcakes and the original is far prettier than mine. Thanks Steph for saving my butt with this year’s cake, you’re a crazy crazy baker and I can’t wait to see what you come up with next!

One last question guys – the adorable plushie featured… is it a Chicken or Duck? Help me settle my argument with Viv once and for all!

    Those decorations are not ugly at all! Seriously I would never have guessed you had any trouble based on those photos. And if there was any recipe where the middle of the cake was gonna collapse, this was definitely the best one to do it for haha! Half a tin of milo sounds freakin awesome, gonna try that next time!

    The chicken-duck argument intrigued me, I know how these arguments get, each person wants to win and gloat, lol. So I decided to do some research as I was stumped myself. I am 99.9% sure that the adorable plush is Kiiroitori, who happens to be a chicken a friend of the character Rilakkuma. Hope you won :)

    Those cakes are so cute, love the colours and the marshmallow clouds as well :)
    And it’s most definitely a chicken! re:Dumpling Girl’s comment, it does look like Kiiroitori from Rilakkuma (I am a big fan!).
    I would love to eat some of that rainbow cake right now, looking at it puts a smile on my face!
