Out of all the seasons throughout the year, in my experience, most people look forward to summer most, the sun, surf and best of all daylight saving. However, being the food lover that I am, summer to me means delicious fruits, most notably cherries, peaches and mangoes. Unfortunately, this year due to the continuous down pour of rain throughout the state, the cherry farms in Young, south of NSW which is responsible for the majority of cherries supplied to most of Sydney was not producing the best fruits. This was not a huge deal for me because my all time favourite fruit is Mangoes, which fortunately there was no problems with it’s supplies.

To take advantage of the abundance of mangoes available I decided to take on a new challenge. Recently Howard visited a new restaurant, Ms G’s whereby he declared their coconut and pandan dessert easily one of the best dessert he has had in a while. Anybody that knows Howard well will know that he is not a dessert person. He would rather eat a packet of chips than indulge in delicious chocolate or ice cream. Intrigued by such a huge statement, I decided to reproduce the dessert, however, putting a twist to it. I asked Howard to describe to me what the dessert consists of, according to him, “Coconut sorbet on top of pieces of macerated strawberries, on top of pandan chiffon cake, surrounded by tapioca pearls.” That description was detailed enough for me to have an idea on where to start.

First off was the Coconut sorbet, which I substituted for Mango sorbet. Instead of macerated strawberries, I diced pieces of fresh mangoes to place the mango sorbet over. Then I made a palm sugar syrup which I drizzled over the pandan chiffon cake.
The final product was transferred to a plate filled with tapioca pearls pre-simmered in coconut cream syrup. Admittedly, I thought this dish looked amazing. However, once I delved in to my version of Ms G’s dessert, I was deeply dissappointed. The flavours just did not work well together. Initially I didn’t know what was missing or why it hadn’t worked out, looking back at it, I now realise that each elements had a soft texture, there was no contrast. As a result of such a failure, I was ecstatic when I found out a friend had booked us in for dinner for the 28th, 9 more days to go!.

I don’t like ending a post on such a negative note, so I thought it would be nice to end it with something exciting.
Last month, I had the pleasure of taste testing a couple of new flavours which Gelatissimo had introduced to it’s stores for summer. Chrissy from Tailormaid Communications contacted me and asked whether I was interested in taste testing three new mango flavoured gelatos. Within a couple of days Chrissy had sent me Gelatissimo’s Mango Tango sample pack, the generous pack consisted of the three of six new flavours, Mango cream and Nutella ripple, Mango cream and berry ripples and Mango and Lime sorbet. The other flavours available were Mango cream and coconut, Mango yoghurt and Mango and Passionfruit sorbet. Can I just tell you how delicious those gelatos were, I think what made it incredibly delicious was that it was made with real Queensland Mangoes.

Anyway, I was so impressed with these new flavours that I immediately e-mailed Chrissy and asked if she was somehow able to discuss with Gelatissimo and organise for three lucky readers to receive three sample packs each. Gelatissimo was generous enough to agree without any hesitation.

I love to make a nameless concoction consisting of a layer of coconut juice jelly, topped with coconut and fresh mango ice creams covered in a fresh mango syrup and crunched up homemade coconut macaroons.
It’s a lot of prep, but it’s SO good.
very simple but VERY YUMMY is my recipe for a mango panna cotta with bit of fresh mango hidden inside

look and reading your description it doesnt sound like it was soft on soft. maybe also sweet on sweet. maybe needed something a little tart or salty in there to liven it up
Definitely my most favourite and yummilicious mango recipe would be mango crepes that are paper thin containing large bite size mango pieces amidst large dallops of sweet whipped cream inside, served with mango ice-cream and covered in mango and passionfruit sauce. delish!!

Mmmm… mangoes screams out summer like crazy and those flavours from Gelatissimo sound absolutely divine! Especially the Mango cream and Nutella ripple one * drools *
My all time favourite dessert has got to be pannacotta. Recently I made a mango pannacotta which was velvety and creamy. Absolutely perfect summer indulgence!
My favourite mango ‘recipe’ would be whatever recipe Haagen Dazs uses for their mango icecream. I love the creaminess, the intense and sweet mango flavour and the chunks for mango mixed into it!! That being said, this could be subject to change if I were to win the sample packs ;]

Mangoes are my favourite fruit! If I don’t get chunks of real mango in my dessert I feel like it’s a waste of mango! So my favourite recipe would involve fresh mango cheeks on top of mango sorbet floating in an ice-cold mango frappe. Adding some sago or pearls wouldn’t go astray either! Mango-a-go-go galore!
My favourite mango recipe has to be mango pudding at home we usually use a fail safe recipe consisting of mango jelly, fresh mangoes and evaporated milk its simple yet refreshing and delicious served with some extra evaporated milk on top.
ps. also generally love anything with mangoes and coconut together

My favourite is our rendition of the infamous Masterchef snow egg. Instead it consists of strawberry and guava granita, mango custard and mango puree layers with the mango sorbet filled meringue snow egg on top, dusted with icing sugar.
My favourite mango recipe is my own mango smoothies. They are nice and healthy consisting of fresh mango, yoghurt, milk and ice. It’s perfect to have on a hot summer’s day, it’s cool and refreshing. Sometimes I make it into a fruit shake by adding vanilla ice cream instead of yoghurt. It then tastes like delicious mango ice cream.
That failed dessert looks sooooo yummy, so a big *win*! I bet it tasted great

I love making this “Mango Butter Cake” http://www.cookrepublic.com/recipe-archive/a-buttercake-called-mango/ over and over again! It has a lovely texture, bright sunny colour and a tangy after taste that is unbelievable.
I use this mango butter cake to make “Mangomisu”, a tropical take on Tiramisu where I layer the mango cake at the bottom, soak it with Cointreau cream and top with fresh mango slices and berries … absolutely sinful!

I love to make a grilled fish with Mexican mango and jalapeno salsa. It’s from a cookbook called “Baja! Cooking on the edge” – the state of Mexico that my partner is from. The coriander, lime and habanero chillies are so delicious!
Shame you failed on the dessert, it does look visually appealing, I’m sure that once you get to taste the dessert itself you’ll make an even better version the next time =)

I love mangoes cold and as is, but i also love making the chinese drink called ‘yeung zi gum lou’.
Some syrup water, coconut milk, mango puree, grapefruit meat delicately pulled apart and mango pieces cubed all mixed together. SO refreshing and delicious anytime of year! It goes together oh so well!
I only love summer for fruits! Love mango! Shame about your dessert fail, but I’m sure it was still tasty

My favorite mango recipe is Mango Daiquiri’s.
I use a really fail safe cheats recipe with a tub of mango and lime sorbet softened and then add a 3:1 mix of white rum to vodka (which often gets stronger through the night!).
Best served with an attractive man!
My favourite mango recipe was a bit unusual to me when I first heard it. My best friend once suggested I use mangoes and yellow capsicum instead of tomatoes when making bruschetta. I’ve never looked back! The sweet, soft mango, and the crunchy bread and capsicum make such a great combination. I couldn’t ask for more from a summer appetiser. Yum!

My mum makes this very simple but tasty mango chicken dish: she buys a bbq chicken and rips it up, and then makes the sauce with diced mango, soy sauce, garlic, onions, chicken stock, and serves it over pasta (at least I’m pretty sure that’s what she puts in it!!!) anyhow, it’s very yummy
Mango fruit cake. 5 ingredients,2 eggs ,half a cup water,600gr. mixed fruit,can mango peices and juice (mashed),2 cups of flour.Boil mango, juice water,fruit for 1 minute .Allow to cool then add eggs and flour.Place in aloaf tin ,bake for40 minutes at 160 degrees, time may vary with ovens.This is yummy and low in fat and taste better days after being made . Ihave also made them in muffin trays.
My mum’s Mango Pavlova is my favourite mango recipe, she makes it look so delicious covered in mango and whipped cream.
My new favorite mango recipe I discovered this summer – mango cupcakes with saffron/pistachio frosting (vegan!) it’s every bit as delicious as it sounds
